Strawberry Shortcake Sundae

Ingredients:
1 punnet strawberries
1 tsp corn flour
1 tbsp caster sugar
½ lemon, juiced
To Assemble:
6 shortbread biscuits, slightly crushed
4 scoops vanilla ice cream
100ml thickened cream
50g white chocolate
4 fresh strawberries
Method:
Make your compote first, medium heat
Add your berries, sugar, flour and lemon juice
Bring to a boil and reduce to a simmer for a few minutes until it’s a bright vibrant colour and thick consistency.
Build your sundae by starting first with the shortbread,
Add your compote mix
Then add 2 scoops of Vanilla Bean gelato and repeat again
Finish off with more compote, thickened cream, fresh berries and white chocolate garnish.
