Strawberry Cobbler and Strawberry with White Chocolate Swirl Gelati

INGREDIENTS:
Strawberry Mixture
- 250g strawberries
- 1tbsp sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
Topping
- 150g plain flour
- 1tbsp sugar
- 113g cold butter
- 1/2 cup of milk
- 1tbsp vinegar
- 1 egg
- 1tsp vanilla extract
METHOD:
Strawberry Mixture
- Add milk to vinegar and leave to sit for 5 minutes.
2. Peheat oven to 180 degrees fan forced. Add strawberries, sugar, cornstarch and lemon juice to a 20cm skillet.
Topping
3. In a separate bowl combine flour, sugar, salt and butter. Use you hands to massage in the butter until the mixture is flakey.
4. In another bowl, whisk milk / vinegar, egg and vanilla together and add to the flour mixture. Mix until combined.
5. Spoon topping over the strawberries. Bake until the top is golden approx. 50 minutes.
6. Removed from oven and serve with a scoop of Gelati.
