Strawberry Brownie with White Chocolate Ganache

Strawberry Brownie
Chocolate and Strawberry is a match made in flavour combination heaven! Gooey Gluten Free chocolate brownie pairs perfectly with tart strawberries and a sweet white chocolate ganache.

  • 75g melted unsalted butter
  • 200g sugar
  • 90g brown sugar
  • 1tsp vanilla extract
  • 4 eggs
  • 80g cocoa powder
  • 75g chocolate chips
  • salt

White Chocolate Ganache

  • 300g strawberries
  • 250g heavy cream
  • 750g white chocolate
  • 1tbsp strawberry jam


1. Prehat oven to 160C fan forced and grease and line a 20cm square baking tin.

2. Mix together melted butter, sugar, brown sugar and vanilla essense together until the ingredients are combined.

3. In another bowlwhisk together eggs until they have small bubbles on top.

4. Add eggs to butter and sugar, sift in cocoa powder and mix. Add the chocolate chips and salt.

5.Pour into the tin and bake for 30-35 minutes until the middle is set. Remove from tin and leave to cool.

White Chocolate Ganache

6. Heat cream and white chocolate in a pot, stiring to ensure the chocolate melts evenly.

7. Remove from heat and leave to cool slightly.

8. Slice strawberries in half and lay over the top of the cooled brownie.

9. Pour ganache over the top and marble through the strawberry jam. Leave in fridge until ganache has set.
