These Piña Colada cupcakes are the perfect combination of sweet, fluffy pineapple goodness. This cocktail inspired recipe is the perfect accompaniment to our Piña Colada gelati, making the perfect summer snack.

INGREDIENTS:
  • 42g room temperature butter
  • 78g sugar
  • 43g sour cream
  • 2 egg whites
  • 82g plain flour
  • 1tsp baking powder
  • 80mls pineapple juice
  • Pineapple wedges and maraschino cherries (garnish)
    METHOD:

    1. Preheat oven to 180C and line a muffin tin with patty pans.

    2. Cream together butter and sugar for 4 minutes until light and fluffy.

    3. Add sour cream and mix until combined.

    4. Add half the egg whites and mix until well combined. Add the other half and mix again. 

    5. In a separate bowl combine the flour and baking powder. Add half of these into the sugar mixture and the pineapple juice and mix until combined. 

    6. Spoon the mixture into the patty pans and bake for 17 minutes until golden on top.

    7. Remove from oven and leave to cool for 30 minutes.

    8. To serve: top each with a scoop of Piña Colada gelati and garnish with a wedge of pineapple or a maraschino cherry.
