Strawberry and White Chocolate Gelati Roulade

Ingredients:

  • 1 Pre-made sponge

  • 1 x 570ml tub Strawberry with White Chocolate Gelati 

  • 1 Punnet strawberries, quartered 

  • 2 tbsp pistachios, chopped 

To serve

  • 1 Punnet strawberries, halved 

  • Mint 

  • Icing sugar

Method:

  1. Take gelati out of the freezer 10-20 minutes before using.

  2. Add gelati, strawberries, and pistachios to a large bowl, and use a rubber spatula to fold the ingredients through the gelati.

  3. Place the sponge on 2 pieces of baking paper. Spread the gelati mix over the sponge. Use the baking paper to help you roll the sponge.

  4. Wrap in the baking paper and place in the freezer overnight.

  5. Slice the roulade into pieces. Serve with fresh strawberries, mint, and a sprinkle of icing sugar.

  6. Enjoy!
