Mango and Passionfruit Sorbet Crepes

Ingredients:

  • 1 cup of milk

  • 1tblsp granulated sugar

  • ½ cup flour

  • 1 large egg

  • 1/8 tsp salt

  • 2 tbsp. melted butter

  • 1 jar of Mango and Passionfruit Swirl sorbet

  • 1 fresh mango

  • 1 fresh passionfruit

  • 1 table spoon of passionfruit pulp

  • 75 grams of melted white chocolate

To serve

  • Pinch of shaved coconut

Method:

  1. Blend together milk, egg, sugar, flour, salt, and 2 teaspoons of the melted butter on a high setting.

  2. Leave the mix to rest for 5 minutes.

  3. Heat your pan to medium and brush it with some butter.

  4. Quickly spoon ½ cup of the batter into the pan, tilt the pan so that the mix covers the surface in a thin layer.

  5. Cook for 20 seconds or until the crepe loosens when you run a spatula around the edge of the pan. Flip the crepe and cook until golden brown.

  6. Remove the crepe from the pan, fold and serve with a scoop of Mango and Passionfruit gelato. Drizzle with which chocolate and top with passionfruit pulp.
