Chocolate Covered Gelati Biscuits

Ingredients:

  • 400g 62% chocolate

  • 150g chocolate gelati

  • 150g peanut butter swirl gelati

  • 6 white chocolate and macadamia cookies (soft ones)

  • 6 dark chocolate cookies (soft ones) can use store-bought cookies

Method:

  1. Freeze your moulds to make sure they are nice and cold.

  2. Now prepare the chocolate cases. Break or chop the chocolate into pieces and melt in a heatproof bowl over a pan of simmering water (do not allow the bottom of the bowl to touch the surface of the water), stirring occasionally until smooth.

  3. Brush the silicone moulds with the melted chocolate evenly and place in the fridge until set and hard. Once the chocolate has set, repeat with another coating of chocolate and refrigerate until set.

  4. Fill the chocolate moulds with ice cream and then cut your cookie to size and place on the bottom.

  5. Allow to set again in the freezer for at least half an hour before popping out.

  6. Enjoy!
